These vegan, protein packed peanut butter & banana cookies šŸŖ are nice & crisp on the outside, with a soft and chewy center! They are packed with nuts, providing those healthy fats, flavor, crunch, and only take around 30 minutes to prepare! They serve as the perfect snack or grab-and-go breakfast, by itself, or alongside a cup oā€™ jo!


p.s. I must admit, these donā€™t have the usual ā€œcookieā€ texture, theyā€™re more cakey, but I promise theyā€™re darn good.
