These vegan, protein packed peanut butter & banana cookies šŖ are nice & crisp on the outside, with a soft and chewy center! They are packed with nuts, providing those healthy fats, flavor, crunch, and only take around 30 minutes to prepare! They serve as the perfect snack or grab-and-go breakfast, by itself, or alongside a cup oā jo!
p.s. I must admit, these donāt have the usual ācookieā texture, theyāre more cakey, but I promise theyāre darn good.
